This is my take on the cream cheese 'muffins' that have about a million variations on the low carb sites. Perfect for P3 snacking, but be careful, you'll want to eat them *all*!!!

Scotch eggs are a delicious and portable way of getting your breakfast or snack. The trick to making them lies in making sure your hard boiled eggs and sausage are *cold*, so keep the unused materials in the fridge while making them.
Make sure your sausage is cooked all the way through....
